I jumped the gun on pulling a few ears of Abenaki flint corn (aka Roy’s Calais). This corn was planted as part of my Three Sisters Garden (more on that later). The ears are not nearly as big as I had read but my garden is shaded a large part of the day. On the other hand, the ears I pulled filled out well with big kernels. My hope is to harvest enough for a pan or two of cornbread. I’m going to let the rest dry on the stalk for a couple more weeks before harvesting. I don’t know if you can tell from the picture, but one of the ears is a dark burgandy-brown. Really beautiful!
