“Victory gardens, also called war gardens or food gardens for defense, were vegetable, fruit and herb gardens planted at private residences and public parks…during World War I and World War II. Around one-third of the vegetables produced by the United States were from victory gardens. In addition to indirectly aiding the war effort these gardens were also considered a civil “morale booster” — in that gardeners could feel empowered by their contribution of labor and rewarded by the produce grown. This made victory gardens become a part of daily life on the home front.” (Wikipedia).
USA Today recently reported that the inflation rate for food is currently twice the general inflation rate. Beef prices are up over 30%. Pork prices over 50%. While some of these increases can be blamed on such unpredictable factors as disease and drought, I believe most of the increase is due to plain old corporate greed.
I think its time we dusted off the old Victory Garden idea and grow whatever we can. Maybe you don’t have room for a traditional garden…so stick a couple tomatoes in a tub, peppers in a pot and beets in a box! Oh, and can, freeze, dry, pickle, ferment and otherwise preserve everything we can. Our wallets, health and tastebuds will thank us.

Garlic!

Dug my garlic today. I grow elephant garlic which has large multi-clove bulbs. I tied them ten at a time and hung them to dry. The final count was eighty bulbs plus a few for use fresh in the kitchen.
